In search of the perfect steak we’ve tried beef from all over the world – from the pampered Wagyu of Kobe, Japan to Argentina’s Pampas-grazed cattle and the prized USDA, the best America has to offer. And our conclusions? That the meat best suited to cooking over real charcoal is from right here in Britain. Traditional British breeds, reared properly by people who care about what they do, have a depth of flavour that surpasses beef from anywhere else in the world.
But there are a wide range of traditional British breeds. From the diminutive Dexter (3 feet tall to the shoulder) to the enormous, and very placid, South Devon. Here at Hawksmoor we always serve steaks from our favourite breed of all - the mighty Longhorn – but we also usually have steaks available from select Guest Breeds which all have something different to offer. As with our Longhorns, these Guest Breeds come from The Ginger Pig’s farm in North Yorkshire.
